In the mid-1860s, the French wine industry encountered a catastrophic crisis that jeopardized the entire national economy. Countless quantities of wine were developing a sour or bitter flavor, rendering the product completely unsellable. Emperor Napoleon III personally requested that the renowned scientist Louis Pasteur investigate why this valuable beverage was deteriorating so rapidly. During this era, most individuals incorrectly assumed that chemical reactions occurred spontaneously, independent of any biological influence from living organisms. Pasteur utilized his sophisticated microscope to meticulously examine various samples of healthy wine and compared them to the contaminated batches.
He eventually discovered that healthy wine contained circular yeast cells, whereas the spoiled samples were teeming with minuscule, rod-shaped bacteria. These microscopic invaders were converting the alcohol that the yeast had produced into unwanted acid. Pasteur recognized that these harmful microbes were contaminating the open containers by falling from the atmospheric dust during the production cycle. To eliminate this obstacle, he proposed heating the liquid to a precise temperature for a temporary duration. This innovative procedure successfully eradicated the dangerous bacteria without compromising the characteristic flavor of the French wine. This significant breakthrough rescued the industry and established the scientific foundation for the essential safety process currently known as pasteurization.
