Before you begin the sorting activity, read the following information about how your body uses enzymes to process food.
Inside your body, tiny workers called enzymes act as special tools to help you break down food. These tools help speed up chemical changes without being used up in the process. Without these helpers, it would take many weeks for your body to turn a single meal into energy. People can see how these tools work by measuring how fast a substance, like starch , turns into a simple sugar. One common tool is called amylase , which is found in human spit. This tool targets long chains of starch and breaks the tiny links that hold them together. When these links break, the starch turns into a sugar called maltose. This change happens much faster when the heat is near normal body temperature. If the area becomes too hot, the tool changes its shape and stops working. While these tools make it possible to use food for energy, the actual speed also depends on how much you chew.
